Urban Cheesa

My one boss love cheesas. She graves it sometimes. Her worst nightmare came true when the local coffee shop closed down and no more Urban Cheesas. Well I told her that we can make our own. She did not believe me but the graving got to her, so she said Lets try this.

Ingredients

200g Cheddar or Sweet cheese grated
75ml Mayonaise like Cross en Blackwell
Chopped spring onions
Paprika
Bread Of your choice

Method

Mix mayo and cheese together add chopped onions.
Put on bread covering all sides and thick.
Place under the grill and melt cheese till it colours light brown on top.
Sprinkle paprika over and serve with Salad

Estelles Pea Soup( So easy!)

A few weeks ago it was cousing birthday party and she decided that a port and soup evening will be great for her birthday geust of 50.
She made her peasoup on the wednesday evening. Friday my cousing Oscar phoned me and ask if I would come over to the house. Well got there cousin was not herself. Oscar asked me to taste the soup she made, and shame something went wrong. So I offered to be the hero and make her my pea soup for the saturday.
I dedicated this recipe to Estelle for being a great hostes when she has dinner parties on the farm.

This recipe is very easy and not expensive at all and you can feed an army.

Ingredients

1 packet(500g) dried peas
1 packet(500g) baceon diced
2 onions chopped
2 medium potatoes(pealed and grated)
1/2 t crashed garlic
oil
2l water

Method:

Fry the chopped onion in the oil till brown. Add the bacon and fry till soft.
Put 1 liter of water into pot and add the potatoes and the dried peas.
Let it cook till it you dont see the peas anymore.
Throw the rest of the water into the pot and simmer for about 30min at low temperature.
Season with salt and pepper to taste.

I usually serve bread with my soup.

Saving on shopping

HOW DO I SAVE ON MY MONTHLY SHOPPING

Here are a few easy steps how you can budget better every month on shopping for your family.

I had a family of 5 and it was not easy doing shopping every month and feeding the family on a little salary.

Here are a few tips:
1) Make a list of dishes your family likes
2) Look for more healthy dishes and recipes, I did a two week recipes
3) Calculate your meat portions for a month. When you purchase these meat defied it up into meals.
4) Make a shopping list of everything you will need and go to three different shops and write down which shop is cheaper on tin food, soaps ect.
5) I did that one month and never again. But I knew that the prices of my groceries. And I knew who gives me a great deal and who not
6) Keep 4 envelopes for your weekly wet groceries. Only take the money out on a Monday to buy your daily milk, bread and veggies.

Chicken Easy

This was my stepsons favourite Recipe. Very easy and tasty.

INGREDIENTS

6 to 8 pieces of chicken
1 pk of mushroom soup
1 cup mayonaise
1 cup chutney
125ml of milk

Mushroom optional or you can use frozen peas for colour

Method

Put chicken pieces in a cassorole dish with a lid. Add the mushroom or peas.
Mix the rest of the ingredients together and through over the chicken.
Put in a 180 degree pre heated oven for 1 hour.

Serve with rice and vedge.

Fish Pie

This recipe use to save my life when I did not have alot of time to prepare for a family cooked dinner. Running a household, having a career and studying for my degree was hectic at times. But this recipe never failed me.

Ingredients

1 tin of tamato pilchards
1 onion
1 packed of instant mash(dry)
handfull of grated cheese

Method

Saute the Onion a little bit of oil til brown
Throw in the fish and smash it a fork.
Make the mash instructed on packed

Through the fish into a flat dish. Spread the mash evenly on top of the fish.
Sprinkle the cheese on top and make in the oven fot 15 minutes until golden brown.
Serve with a toss salad.

Tillas Pineapple salad

This recipe was also very difficult to get out of a friend that I met during my Police days. What an amazing women. She was a very organised person and had alot to give to others. We were having a braai at the Police station and I just fell in love with this salad. You can feed an army with it.

Ingredients

2 cups of pasta rice
1 tin condenced milk
1 tin crushed pineapple
1 cup mayonaise
2 carrots grated

Method

Boil pasta rice. Let it cool down a bit.
Throw in condenced milk, carrots, pineapple and mayonaise with the pasta rice.

Serve cold.

Jacky's Tomato Bredie

This one is for my friend Pat. She loves my tomato Bredie and when I invite her for supper she always ask are we having tomato Bredie.

INGREDIENTS

1kg fresh tomatos(skinless through popping in boiling water and dice them)
750g beef it can be chuck or any cheep beef
1 to two onion
1 t spoon garlic
250ml red wine
salt and pepper

Method

Saute the onion and the garlic in 20ml of oil till brown
Then throw in the beef that are cut into chunks
Fry until the chunks are sealed on both sides.
Throw in the tomatos and wine

Simmer the dish for about 2 hours at low tempreture untill the meat is soft.
Season with salt and pepper

Serve with basmati rice

Jacky's FAMOUS Mac and Cheese Recipe

This recipe is very dear to my heart and it took me three months to get this from a friends mom. She was not willing to part with it easily, but I used my old charm and she gave it at long last. It is really home goodness!

INGREDIENTS

500g macaroni
2 pk of mushroom sauce powder
1 Liter of milk
1 onion
1 green pepper
125g real butter
250g of chedder cheese
1pk of bacon(any type)

METHOD

Cook your macaroni as instructed on the packet.

SAUCE
Saute the onion and green pepper that is cut into little cubes in the butter till brown. Put in the bacon and fry till cooked. Mix the two mushroom soup powder with the onion/bacon mix. Gradually throw in milk until it makes a white sauce tecture.

Mix the sauce and the macoroni together and place into a dish. Throw the cheese thick on top and bake in a moderate(180 degrees) oven for about 20 minutes.

Serve with a salad or just on its own. I like it with tamato sauce.
